Cool and refrigerate promptly
Large amounts cool slowly. Divide food into shallow containers when appropriate and refrigerate within recommended time limits. A refrigerator should remain cold enough to slow microbial growth.
Reheat what you will eat
Reheat leftovers thoroughly and avoid repeated cycles of warming and cooling the whole container. Soups, sauces, and gravies need particular attention. Follow current local food-safety guidance for temperatures and storage times.
Smell is not a safety test
Dangerous bacteria do not always change smell, taste, or appearance. When storage time or temperature is uncertain, discarding the food is safer than sampling it. People who are pregnant, older, immunocompromised, or very young face higher risks from foodborne illness.
