Add a protein anchor
Beans, lentils, tofu, tempeh, eggs, fish, poultry, meat, cheese, yogurt-based dressing, nuts, or seeds can contribute. Choose a portion that makes the protein visible rather than decorative.
Include carbohydrate and fat
Grains, potatoes, corn, bread, fruit, or crackers provide energy. Oil-based dressing, avocado, nuts, seeds, cheese, olives, or tahini add fat and carry flavor.
Use contrast
Combine crisp and soft textures, acidity and richness, fresh and roasted components, herbs, spices, and a dressing you enjoy. If raw vegetables cause discomfort, use cooked vegetables, grains, or soup instead of forcing a cold salad.
