Simple vs. complex carbohydrates explained
The difference comes down to molecular size — and it affects how fast a carbohydrate hits your bloodstream.
The structural difference
Simple carbohydrates
One or two sugar units (mono- or disaccharides) — table sugar, honey, fruit juice, candy. Digested and absorbed quickly, causing a faster rise in blood sugar.
Complex carbohydrates
Long chains of sugar units (polysaccharides) — whole grains, legumes, starchy vegetables. Take longer to digest, generally producing a slower, more moderate blood sugar response, especially when they retain their natural fiber.
This isn't a strict "good vs. bad" split — whole fruit is technically a simple-carb source but comes packaged with fiber, water, and micronutrients that slow its digestion and add nutritional value. Highly processed simple carbs (soda, candy, refined white bread) are the ones most worth limiting, not simple carbs as a category. In general, building most of your carbohydrate intake around complex, minimally processed sources — and pairing carbs with protein, fat, or fiber — supports more stable blood sugar and better satiety.[1]
