Thiamin (vitamin B1): food sources, functions, and deficiency context

Thiamin helps cells release usable energy from food, but taking extra thiamin does not create extra energy when intake and status are already adequate.

What thiamin does

Thiamin, or vitamin B1, is a water-soluble vitamin used in enzyme systems that process carbohydrate and certain amino acids. It also supports normal cell growth and function. The word “energy” here means biochemical energy metabolism—not a stimulant effect you can necessarily feel.

The body stores relatively little thiamin, so regular dietary intake matters. Food processing can remove thiamin from grains; enrichment returns specified nutrients to many refined grain products.

How much adults need

The NIH lists 1.2 mg per day for adult men and 1.1 mg for adult women. Pregnancy and breastfeeding raise the recommendation to 1.4 mg. Needs differ for children and adolescents.

Those small numbers do not mean the vitamin is unimportant; vitamins work at very different dose scales. Compare a food or supplement with the appropriate unit rather than assuming milligrams and micrograms are interchangeable.

Food sources that fit ordinary meals

Pork is a concentrated source. Fish, beans, soy foods, nuts, seeds, whole grains, and enriched breads, cereals, pasta, and rice also contribute. A meal such as bean chili with whole-grain bread can supply thiamin from several ingredients without being built around one “superfood.”

Fortified and enriched foods can be meaningful sources. Check the ingredient list and Nutrition Facts label when comparing products, since grain processing and fortification differ.

Deficiency deserves medical attention

Deficiency can involve appetite and weight loss, weakness, confusion, memory problems, nerve symptoms, and heart problems. Severe deficiency causes beriberi. Wernicke-Korsakoff syndrome is a medical emergency strongly associated with chronic alcohol misuse, although other situations can contribute.

Risk is higher with alcohol dependence, some malabsorption or bariatric-surgery histories, and certain medical conditions or medications. Symptoms are not specific enough for self-diagnosis.

Supplements and the “energy” claim

A supplement can correct inadequate intake, but it is not a general energy enhancer for someone who already gets enough. Thiamin has no established tolerable upper intake level because harmful effects from high intakes have not been demonstrated, yet that is not proof that any dose is useful.

Furosemide and fluorouracil are among medications NIH identifies as potentially affecting thiamin status. Medication and supplement decisions belong with a physician or pharmacist.

A food-first day can cover several routes

Breakfast might contribute through an enriched or whole-grain cereal, oats, seeds, or bread. Lunch can add beans, soy foods, whole grains, or meat. Dinner might include pork, fish, legumes, or another grain. No meal needs to be designed around a thiamin number; spreading varied sources across the week creates redundancy.

When comparing grain products, “whole grain” and “enriched” answer different questions. Whole grains retain more of the original grain structure and nutrients. Enrichment adds specified nutrients back after refining. Either product may list thiamin, and the current label—not the package color—settles the comparison.

Boiling can move water-soluble vitamins into cooking liquid. In soup the liquid is eaten; in drained foods some dissolved nutrient may be discarded. This does not make boiling harmful or require a supplement. It is one more reason nutrient tables are estimates and varied food patterns are resilient.
