In-N-Out publishes specific Hamburger variations: with onion, mustard-and-ketchup instead of spread, and Protein Style with onion. Use those complete rows rather than guessing what a removed bun or sauce contributes.

Three builds, three totals

Hamburger with onion is 360 kcal, 16 g protein, 38 g carbs and 670 mg sodium. The mustard-and-ketchup version is 300 kcal with the same listed protein and carbs, at 610 mg sodium. Protein Style is 210 kcal, 12 g protein, 9 g carbs and 390 mg sodium.

The source-defined sauce version is 60 kcal lower than standard. Protein Style is 150 kcal lower, but also lists 4 g less protein. A lettuce-wrap name does not mean all nutrients except carbohydrate stay unchanged.

The portion weight is revealing

The source weights are 209 g, 202 g and 211 g respectively. Protein Style is slightly heavier than standard despite its lower energy. Total mass is therefore not a useful shortcut for either calorie or protein content.

Stay inside the published choices

This is not a calculator for every off-menu combination. No extra patty, cheese, fries, drink or spread packet is inferred. If you choose a different customization, find an exact official entry or keep its nutrition uncertainty visible.
