Step 1: record ingredients as used

List every meaningful source of energy or nutrients: cooking oil, sauces, milk, toppings, marinades that remain in the dish, and small ingredients that add up. Record weights when practical. Household measures are workable, but gram weights reduce ambiguity.

Match each ingredient to an entry describing the state you measured: raw, cooked, drained, canned in liquid, or dry. For branded foods, use the current package when possible.

Step 2: calculate the batch total

Multiply each ingredient’s nutrients per unit by the amount used, then add the ingredients. Keep the batch total separate from serving calculations. This prevents repeated rounding and makes later portion changes easy.

Recipe total = sum of nutrients from every ingredient

Step 3: measure finished yield

After cooking, remove inedible bones or discarded liquid as appropriate and weigh the finished edible recipe in its serving container. Tare the empty container first. The finished weight captures water absorbed or evaporated during this particular cook.

For items divided into genuinely equal pieces—such as 12 muffins—counting pieces can be reasonable. Weighing the finished batch is better for soups, casseroles, curries, and dishes served in unequal scoops.

Step 4: calculate a portion

Divide the batch nutrient total by finished grams to get nutrients per gram, then multiply by the portion weight. Alternatively, divide by equal servings if you intentionally portioned the whole batch.

Portion nutrients = batch nutrients × portion grams ÷ batch grams

Common mistakes

Do not combine raw ingredient nutrition with a cooked-food database entry for the same ingredient. Do not divide by the pre-cooking weight after substantial water change. Avoid leaving out oil because only a thin coating appears visible; estimate how much entered the pan and subtract what you can reasonably document as discarded.

Recipe nutrition remains an estimate. Ingredient variability, database selection, cooking loss, and scale accuracy all matter. The goal is a transparent method that can be repeated—not a result with unwarranted decimal precision.

Make the work reusable

Save the ingredient entries, amounts, finished batch weight, and date. The next time you make the recipe, update only what changed. Use the recipe macro scaler when changing the number of servings.
